About Chef Christophe

Christophe is French pastry chef; he was a chef in Paris at the restaurant La Charrette (rue des beaux arts) …. And in different restaurants throughout is Carrere in France. when he met his American Wife, the family decided to move to Cincinnati.

Once in Ohio he wanted to share with his own little boy (Marcel) the sweet memories of French Bakery, because he felt the need to find the same diversity, the same scents, the same olfactory memories that rocked his youth. For him, it was not easy at the beginning, found the smell, the crusty off the pate feuilletée, the fondant off the cream Patissière full of Vanilla, the crunch of cerise’s, the delicate and creamy marriage of a Black Forest flooded by the discretion of a rum and the richness of chocolate.

And at the end, how to decrease the sugar to much present generally in the pastry? How to protect our children of this aggression that sugar can become on their little bodies?

Together, he tried to create sweet cakes without too much sugar, to search what they needed to do that. It’s why during 3 years they created a little laboratory in their kitchen, an alchemy laboratory of a Patisserie! They worked to improve the desires and created the beauty of his memory.
