It is believed that an explorer by the name of Jacques Cartier who traveled to North America first introduced the scarlet strawberry, or Virginia Strawberry, to France’s region of Brittany. Strawberry cake is traditionally a sponge cake soaked in kirsch, filled with mousseline cream and strawberries. While the authentic recipe calls for mousseline cream, it is commonly replaced by butter cream. We offer both varieties of the recipe.
