The éclair – or “lightning bolt” – did not always bear this name. Originally, it was called the “Duchess bread,” a finger-shaped puff pastry, rolled in almonds. In the 19th century, Antonin Carème, one of the greatest – if not the greatest – pastry chefs in history, had the idea of removing the almonds, filling the pastry with chocolate or coffee custard and covering it with melting sugar. The “lightning” was born!
